    Madras Curry Dip

    Madras Curry Dip

    yields about  2  1/2 cups                                 

     

    8 oz. Cream Cheese (Philadelphia), softened to cool room temperature

    4 oz. (1/2 cup) Mayonnaise (Hellman's)

    4 oz. (1/2 cup) Sour Cream (Daisy or Breakstone)

    1/4 c. Honey

    3 T. fresh Lime Juice

    2 spring onions; white part minced, green part sliced

    2 cloves Garlic, crushed

    2 t. fresh Ginger, grated

    1  1/4 t. Salt (or to taste)

    1 T. + 1 t. favorite Curry Powder

    1/2 t. ground Ginger                           

    1/4 t. ground Black Pepper                      

    1/8 t. ground Cayenne Pepper (optional)

     

    -Heat Curry Powder, Ground Ginger, and Black & Cayenne Peppers in small saute pan over medium-low heat, stirring for 4 to 5 minutes, until fragrant but not smoking; cool.

    -Stir together all ingredients and refrigerate overnight. 

    -Keeps for 2 weeks, refrigerated.

    -Serve with fresh vegetables- especially good with Carrot and  Jicama sticks.

    I really liked this one and enjoyed the cool crispness of the jicama sticks. I'm doing this one for Thanksgiving.
